No-Bake Chocolate And Strawberry Tart

This beautiful recipe has been inspired by Mr Bean restaurant Indore…Some days ago my cousins ordered strawberry tart from famous Mr Bean restaurant for a family get together.. From then I wished to make it.. So I searched  for its  recipe and nailed it beautifully..I sent my cousins this tart.They appreciated my Tart ..and praised me to make the same ..

Preparation Time: 25 Minutes
Cooking Time: 10 Minutes
Serves: 4

INGREDIENTS:
20 Oreo biscuits
50 gms melted butter
200 gms semi sweet chocolate or dark chocolate
100ml fresh cream
5-6 chopped strawberries
Whipped cream 2 tbsp for decoration
Chopped nuts (almonds, pistachios, etc), (optional)

INSTRUCTIONS:

  1. Place oreo cookies into the bowl of a food processor and blend until crumbs form. Add melted butter and process until nicely mixed.
  2. Put the mixture into the tart pan and with the back of your fingers press it to form even layer into the bottom and edges of a tart pan. Place it in the fridge to set.13
  3. In a pan, heat the cream on low heat for a few minutes to make it hot. Remove from heat, pour over the chopped chocolate and let it rest for 1-2 minutes.11
  4. Stir until dissolved.Pour the chocolate filling over the oreo crust and top it with fresh strawberries.
  5. Decorate with whipped cream.(optional) Keep it in the fridge for at least 2 hours. Serve chilled.

Strawberry And Yogurt Parfait

Strawberries are my favorite ..and with combination of yogurt they taste superb.

In my daily breakfast or lunch I ALWAYS make one dish with strawberries…this time I am sharing strawberry and yogurt recipe ..hope you all enjoy it..simple and easy….

Strawberries are rich source of fiber. They contains the antioxidants. The magnesium and potassium in strawberries helps in improving the bone’s health. They  are even great fruit for weight loss.

INGREDIENTS:
Yogurt – 2cup
Fresh Strawberries – 100g or 1cup chopped
Strawberry Jam – 2 tbsp
Honey or sugar – 3tbsp (plus more depending on how sweet you’d like your yogurt to be)
Glasses – 2

INSTRUCTIONS:

  1. In a bowl beat the yogurt until smooth. Add the sugar  in and give it a good mix.
  2. Pour a tablespoon of Strawberry Jam in to the bottom of the glass. Then layer Yogurt and chopped Strawberries alternatively, finishing with the strawberries, till the glass is full.
  3. Place a dollop of sweetened Yogurt on top and drizzle with some strawberry jam. Top it off with a strawberry.
  4. Repeat the same in the other glasses.

Serve immediately or chill and serve it cold after a meal.

Notes:

  • You can use Strawberry crush or home made strawberry puree.
  • You can add some crushed biscuits and cornflake ..
  • You can use hung curd also.

Strawberry Custard Jelly Hearts

Today my niece visited so i decided to make something special,and valentine is coming so my mind went towards hearts .. My family loves pudding so I made this pudding with some innovations.

INGREDIENTS:

Biscuits crushed 10-12 (I used Oreo and Straberry cream biscuit mixed)
Strawberry Jelly mix
Strawberry flavored Custard powder 4-5339
tablespoons
Milk 1 litre
Sugar 1/2cup or according to your taste
Finely chopped strawberries( 10-12)

INSTRUCTIONS:

  1. Water in a non stick pan. Coarsely grind together biscuits and butter in a mixer jar and transfer into a bowl.
    (you can crush biscuit with hands also)
  2. Spread a layer of the biscuit mixture in individual bowls  and press lightly and put it in the refrigerator for 30 minutes to set.340
  3. Prepare jelly according to the packet instructions,(but always use little less water than mentioned in the packet)If the pack says to add 500ml of water use only 400ml of water to make sure the jelly sets well.Keep aside to cool.
  4. Spread the strawberry jelly  over a tray to set for some time at room temperature. As soon as the jelly is prepared use a heart shaped cookie cutter to cut the jelly.341
  5. Boil milk in a deep non stick pan. Mix custard powder in 2-3 tbsps milk and add to boiling milk. Keep stirring continuously till it thickens,Add sugar and mix.
  6. Take the bowl in which you set the biscuit layer .Now pour the thick custard using spoon or piping bag..(I used chef’s Bottle kit) .Add some chopped strawberries over it, again pour some custard.Tap the bowl lightly for evenness.342343
  7. Arrange jelly hearts over the pudding.

Yippy Custard jelly hearts are ready! Set in the refrigerator to cool and serve with love.

Nutella 1 Minute Wheat Flour Chocolate Cupcakes

When my daughters came from school they have their result ….so to celebrate their result I wanted to make quick dessert for them I said them please wait for a minute then i got idea and made this 1 minute cupcake …I am happy with their result and kids enjoying cupcakes .
Instant quick celebration recipe ..

Cooking time: 5 minutes
Serves: 2 people

INGREDIENTS:

Wheat flour 5 tbsp
Nutella 2 tbsp
Curd 2 tbsp
Dark chocolate (I used just 2 small pcs)
Powdered sugar 1.5 tbsp (add as per your taste)
Oil 1.5 tbsp (or butter)
Baking powder a pinch
1 tbsp milk
Walnuts
Coffee powder a pinch
Vanilla essence just a drop

INSTRUCTIONS:

  1. Sieve the dry ingredients – both flours, baking powder, powdered sugar and mix well.
  2. Add the oil ,curd, nutella to the dry mixture and mix well. Melt the dark chocolate pieces and add to this mix.
  3. Add coffee powder and milk little by little. Add essence and keep mixing till you get a smooth batter.
  4. Transfer to a microwave friendly mold and microwave on high for 1 minute or a little more. (1 min 20 seconds)
  5. I topped them both with a walnut each. But you can even prepare some lovely looking butter cream frosting if you wish.

Fusion Pudding (Seviyan Kheer With Mango And Custard)

Mango season is about to get over but still, my mind can’t stop thinking about Mango recipe.

So this time I tried a different recipe with Mangoes. Seviyan or vermicelli kheer is a traditional popular dessert.  Seviyan is a delicious and an easy recipe to make.

Basic seviyan is made with milk,seviyan and sugar, and then flavored with cardamom. This time I tried fusion.

I made seviyan kheer with mango and custard.”Fusion cooking is a delight! It creates magic and is fairly easy to do.”Seviyan (Vermicelli) Kheer Recipe.

INGREDIENTS:

2 cups boiled milk
2 tbsp ghee
1 cup mango puree
1 cup vermicelli (seviyan)
1 cup sugar
2 tbsp custard powder
1/4 cup milk for making custard powder paste
1/2 tsp cardamom (elaichi) powder (optional)
2 tablespoons sliced or crushed almonds
1/2 cup chopped mangoes

1 mango for making  rose

INSTRUCTIONS:

  1. Use a nonstick or heavy bottom frying pan to make a seviyan kheer.
  2. Add the seviyan and ghee and roast them for about two minutes on medium low heat.
  3. Add the milk and increase the heat to medium-high.
  4. After milk comes to boil reduce the heat to medium.
  5. Let the milk boil for about 15 minutes, until the milk is creamy and reduced to almost half.
  6. Stir often to ensure the milk does not burn in the bottom of the pan, and also keep scraping the sides of the frying pan.
  7. Add the sugar, mango puree and custard powder paste.
  8. Let the seviyan kheer simmer over low heat for about 5 to10 minutes.
  9. Turn off the heat. As seviyan kheer cools it will become thicker in texture.

First, serve seviyan kheer  in short glasses then garnish with Mango Rosette (For recipe click here: How To Make Mango Rosette)

 Or serve in bowl and garnish with mango cubes and almonds. Serve chilled ….

Mango Phirni

INGREDIENTS:

Ripe mangoes cubed 2 medium
2 tbsp cornflour
Rice 4 tablespoon
Milk 1 liters
Sugar 3/4 cup
8-10 Pistachios, blanched and sliced
6-8 Almonds, blanched and sliced
Silver sprinkles

INSTRUCTIONS:

  1. Soak rice in two cups of water for half an hour. Drain and grind to a coarse paste.
  2. Dilute rice paste with half a cup of water.
  3. Heat milk and bring it to a boil.
  4. Gradually stir in the rice paste, reduce heat and simmer for three to four minutes, stirring continuously or until the milk thickens well.
  5. Add sugar, and continue to simmer till sugar dissolves and is incorporated well.
  6. Remove from heat, cool to room temperature.

Your Phirni is ready …

For mango flavor first you need to make mango jelly:

  1. Make Mango puree in the blender without adding water and keep it aside.
  2. Then add 1/2 cup water in cornflour to make a paste without lumps.
  3. Take a pan and pour the mango puree and boil and stir for some time, then add cornflour paste and stir well until the mixture is thick.
  4. Let the mixture cool down (you may add some sugar according to your taste).

Let’s start the presentation and give it a complete look:

  1. Assembling…take a shot glass, add a scoop of Phirni , then a scoop of mango jelly and repeat the same.
  2. Set in refrigerator for an hour.
  3. Top with mango jelly decoration using a piping bag and silver sprinkles and garnish with basil leaves chill and enjoy.
