Chocolate-Dipped Watermelon

A super refreshing, sweet and juicy summer treat!

INGREDIENTS:

1 small watermelon, cut into hearts and scooped.2930

100g dark chocolate
1/4 cup desicated coconut
Some sprinkles

INSTRUCTIONS:

  1. Chill watermelon balls and hearts in freezer for about 10 minutes.
  2. Melt the chocolate in a glass bowl in the microwave for 1 minute and after 30 seconds stir it.
  3. You can melt the chocolate in a double boiler also. (Place water in the bottom of the double boiler so the top of the water is 1/2 inch below the upper pan. Then place the double boiler over low heat. Stir the chocolate constantly until it is melted. The water in the bottom of the double boiler should not come to boiling while the chocolate is melting).
  4. Dip the sticks or toothpicks in melted chocolate and insert them into the hearts.
  5. Take watermelon balls and hearts and dip each of them into melted chocolate.
  6. Coat these chocolate watermelons with desiccated coconut and sprinkles.

Serve them right away!

Leftover Roti (Chappati) Laddu

This recipe has sweet memories of my childhood. Every alternate day when I came home from school I asked my mummy to make them. My mom was happy as I ate only 1 chappati but because of these laddus I ate 2-3 chappatis together.

INGREDIENTS:

Leftover paranthas or chappatis 4-5
Almond powder 2 tbsp
Sugar in powder form 1 cup
Pure ghee 1/2 cup

INSTRUCTIONS:

  1. Churn all the leftover chappatis / paranthas in a mixer.
  2. Dry roast it for sometime in a wok or a pan .
  3. Add sugar powder and almond powder and mix  till sugar mixes well.
  4. Add pure ghee so that whole mixture can bind.
  5. Switch off the gas and let it cool down.
  6. Make ladoos out of this mixture.242

Enjoy the leftover paranthas with no tension of wastage and don’t disclose the secret until you serve them to your dear ones 😉

Chocolate Chip Cookies (By Tarla Dalal)

INGREDIENTS:

1/2 cup butter
1 cup plain flour (maida)
1/2 cup brown sugar
1/2 tsp vanilla essence
100 gms milk chocolate bar
2 to 3 tbsp milk

Notes:

You can roll out the dough using a rolling pin and cut out different shapes for fancy chocolate cookies.

Jim Jam Cake (Cream Biscuits 5 Minute Microwave Cake)

INGREDIENTS:

Britannia Jim jam Biscuits – 20 (I used Strawberry flavor)99
Milk – 1 cup
Baking Powder / Eno salt – 3/4 tsp (I used Baking powder)
Butter / Oil – to grease (I used butter)

INSTRUCTIONS:

  1. Grease a microwave safe bowl / cake pan. I used a cake pan made of Silicone
  2. Put the biscuits into the blender and blend into fine granules.100
  3. Add baking powder, vanilla and milk and blend well
  4. Pour the batter into the bowl and microwave for 5 minutes
  5. Take it out and wait till it comes to room temperature. Once it is cooled, you can slice and serve.

Notes:

  • Any cream biscuit / cookies can be used
  • Since I have used silicone baking tray, I was able to unmould easily.
  • If you are using any other microwave safe bowl grease generously with oil / butter
  • Adding parchment paper / wax / butter papers helps to unmould easily
