Mangori Palak Ki Kadhi

Today I wanted to make something new for dinner .I thought of many options but I like this idea the most .It came out perfectly . Everyone like it . Mangori Palak ki Kadhi!
A unique healthy spinach kadhi with no ginger, garlic, onion or pakoris…..The moong dal badis/mangoris add delicious texture and flavor that makes it a personal fav.305

INGREDIENTS:
1tbs ghee/olive oil
1/2 cup moong ki daal ki badiyan(also called mangori)
1/3tsp ajwain
1/3tsp methi dana
2-3 dry red chillies
2cup sour curd /yoghurt
4tbsp besan (gramflour)

FOR TADKA:
1tbsp ghee
1tsp lalmirch
1tsp jeera
1/2 tsp hing

INSTRUCTIONS:

  1. Heat a tbsp of olive oil/ghee, and shallow fry about 1/2 cup moong ki daal ki badiyan (also called mangori) and keep aside.306
  2. Now add 1/3 tsp ajwain and 1/3 tsp methi daana along with 2-3 dry red chillies to the ghee and cook for a few seconds.
  3. Add 2 cups of very sour yoghurt which has been blended with 4 heaped tbsp besan, salt, haldi and about 6-8 cups of water.307
  4. Cook on medium high stirring intermittently till first boil.
  5. After the first boil, add the shallow fried badian/mangori and some finely chopped spinach (about 1 1/2 cup) and cook on low flame for at least 1/2 hour or till desired thickness is reached.308
  6. Now give tadka with karipatta ghee, hing, jeera & lal mirch…and serve with hot rice! Or roti309

Cheesy Garlic Pizza Sticks

When my younger daughter came from school she showed me her marks . She was very excited about her result. I was busy but I wanted to make something good for her hard work and result. I opened the fridge and saw leftover pizza bases. I just got the idea and made this for her .Everyone liked it and even the dish became more popular than pizza..

As kids love pizza, cheese and butter they will surely enjoy these cheesy sticks ……

INGREDIENTS:

 Makes: 16 sticks

1 Medium size pizza base131

4 Tablespoon butter (melted)
1 Teaspoon chilly flakes
1 Teaspoon roasted garlic flakes
2 Tablespoon chopped parsley or you can use coriander if parsley is not available(I used coriander)
1 Tablespoon oregano
Pinch of salt
2 Tablespoon pickled jalapeno chopped (optional)
8 Tablespoon grated pizza cheese (or according to your taste)(I used amul cheese)

INSTRUCTIONS:

  1. Take a pizza base cut it horizontally from the centre to get two rounds as shown in picture132
  2. Now cut each rounds in 8 sticks or wedges so that you can have 16 sticks
  3. Now melt the butter
  4. Keep your microwave in preheat mode.
  5. In a bowl mix butter, chilly flakes, garlic flakes, coriander, oregano, chopped jalapeno and a pinch of salt.
  6. Now with the help of brush you can apply this mixture on inner cut side of pizza bread and sprinkle some cheese on this.133134135136
  7. Now set your microwave on convection mode at 200 degree C for 5 – 6 minute or sticks are crisp137

Cheesy Garlic Pizza sticks are ready in Microwave for your kids…

Lahsuni Dal Palak (Spinach And Lentils Tempered With Garlic)

Lehsuni Dal Palak ..Palak wali dal. A healthy recipe for cozy winters. When I tried first time My husband named the dish hotel jaisi dal.

Thick arhar dal tuvar dal when cooked with chopped spinach gives an amazing flavor and texture to the regular dal fry we have. Spinach being rich in Iron is a good source of nutritional supplement to our body. The lentils and the spinach both together fulfill our protein and iron requirement of our body. The lahsuni dal palak can be enjoyed with makka ki roti or even plain rice. It’s a complete filling dish that definitely makes you crave for more.

Preparation Time : 6-7 mins
Cooking Time : 25 mins
Servings : 4

INGREDIENTS:

Tuvar Dal / Arhar Dal – 1 cup
Palak / Spinach – 500 gms (chopped)
Ginger paste – 1 tsp
Garlic paste – 1 tsp
Tomatoes – 4 (chopped)
Turmeric powder – 1 tsp
Salt – as needed

For tempering:

Ghee or Refined Oil – 2 tbsp
Garlic – 5 pods (chopped)
Mustard seeds – 1 tsp
Hing / Asafoetida – 1 pinch
Red chili powder – 1/2 tsp

INSTRUCTIONS:

  1. Wash and strain the dal nicely before use. In a pressure cooker, add dal, chopped spinach, chopped tomatoes, ginger garlic paste, turmeric powder, salt and enough water to cook dal. Pressure cook till the dal gets cooked properly. This may take 5-6 whistles or 10 – 15 mins approx.314
  2. Once the dal is done, stir it well with a ladle so that the dal gets dissolved nicely. Transfer it into a bowl and keep aside.315
  3. For the tempering, take a pan and heat ghee or oil whatever you prefer. Add hing. mustard seeds and allow it to splutter.316
  4. Now add finely chopped garlic generously with little red chili powder. The chili powder will give a nice red color to the oil. Fry everything till the garlic turns golden in color.
  5. Pour the tempering in the center of the dal and close the lid immediately so that the flavor gets infused well inside.317
  6. If you want you can garnish it more with some chopped coriander, it’s personal choice. I didn’t do that because i didn’t wanted the coriander flavor to over powder the flavor of spinach.

Serve hot with tandoori rotis, makka ki rotis, with ghee and jeera rice!

Kurkuri Bhindi (Okra) in Air Fryer

My mom always made kurkuri bhindi ..In my home kids say it “Nani wali bhindi”when I tried first time I thought it was very oily. I have always been a big fan of Kurkuri Bhindi. But given that it is deep fried, we don’t make it much at home.

So one day I thought I made it in  air-fryer so I searched  the recipe and decided to make it.

Without further adieu, let me introduce you to the magical, crispy and guilt free Kurkuri Bhindi made in the Air fryer.

INGREDIENTS:

Bhindi/Okra/Ladyfinger- 250 grams
Gram flour- 2 tbsp
Salt- 1 tsp (or to taste)
Red Chilli Powder- 1tsp
Coriander Powder- 1tsp
Cumin Powder- 1/2 tsp
Mango Powder- 1/2 tsp
Chaat Masala – 1 tsp
Oil – 2 tbsp

INSTRUCTION:

  1. Wash the bhindi under running water and let it dry for sometime. Slit all the bhindi vertically in four pieces.140
  2. Sprinkle gram flour, salt, red chilli powder, coriander powder, cumin powder, mango powder, chaat masala and oil over it. Mix it well such that al the spices and gram flour sticks to the bhindi.141
  3. Preheat the electric fryer for 5 minutes at 200 degrees.4)Once it is preheated, place the bhindi on the air fryer’s mesh and cook it at 180 degrees for next 12-13 minutes. Take the air fryer basket out and flip the bhindi pieces after 5 minutes intervals.142
  4. It may cook any moment after 10 minutes so keep an eye on it after this time.
  5. Based on the results, put in for 1 or 2 minutes based on judgement (be careful here as if it close to cooked, it can burn in a matter of 15 extra seconds).

“Kurkuri Bhindi” is ready. Top it up some more chaat masala if you want. Serve it with hot chapati or eat it as a snack 🙂

Notes:

  • You need to ensure the bhindi (lady finger) is absolutely dry before you mix it with the spices.
  • You can add crushed peanuts for extra crunch or per your taste .
  • Usually we buy small tender okra from our local stores to cook okra vegetable but for this recipe even thick okra will work because seeds will be removed and only okra skin will be used for this recipe.
  • Initially I used to leave the seeds in bhindi and fried it but turned out that seeds impart a bitter taste after frying.avoid this first de-seeded the  bhindi first.

Methi Mutter Malai

I read this recipe on My Magic pan blog. Since then I was desperate to make it..and finally I made it .My kids and hubby loved it.

A very popular Punjabi and North Indian recipe Methi Matar Malai. As the name says it is made from methi (fenugreek leaves), matar (green peas) and malai (heavy cream).

It is one among the most popular recipes in a restaurant’s menu card. It goes well with roti, naan and pulao varieties. Perfect for kids and fussy eaters.

INGREDIENTS:

Green Peas – 1 cup
Onion – 2
Green Chillies – 2
Ginger Garlic paste – 1 tsp
Chilli powder – 1/2 tsp
Garam Masala – 1/2 tsp
Milk – 1 cup
Cashewnut – 5 to 7
Kasuri Methi – 2 tbsp (or fresh methi 1/4 cup)
Jeera/Cumin seeds – 1 tsp
Oil – 2 tsbp
Salt – as needed

INSTRUCTIONS:

  1. Heat a pan with water and add the green peas ( I used frozen) and cook until soft, but not mushy. (You can used readymade safal brand frozen peas).320
  2. Heat a pan with oil and temper with cumin seeds.
  3. Add chopped onions & slit green chillies and saute until they become transparent.
  4. Add ginger-garlic paste, chilly powder, salt & garam masala and saute until the raw smell goes away.321
  5. Add the milk(reserve some soaking/grinding the cashews) and stir in low flame. Add the cooked peas and mix and cook for 3-4 mins.
  6. Soak and grind the cashews into a smooth paste. Add this to the gravy and mix. The gravy will start thickening. Add water or milk (if needed) to get the required consistency.
  7. Finally add kasuri methi and let it cook in low-medium flame for 2-3 mins. Switch off the flame.322
  8. Methi Mattar Malai is ready.

Serve hot with roti, naan or any pulao varieties.

Notes:

  • You can skip the red chilly powder and add more green chillies or green chilly paste for a white version of Methi Matar Malai.
  • If using fresh methi leaves add / saute it for a few seconds after the onions are transparent.
  • Though the recipe is Methi Matar “Malai”, I have not added any Malai (cream) as it was rich & creamy enough with milk & cashew paste… You can add a tbsp of fresh cream finally as per your taste.
  • After adding milk, cook the gravy in a low flame. Else it might curdle.

Tomato Onion Bhurta

INGREDIENTS:

Tomatoes 4 medium size
Green Chillies  3
Onions 2 medium size
Garlic 5 -7 kali
Cumin 1/4tsp
Ghee or Oil
Coriander Leaves
Salt to taste

INSTRUCTIONS:

  1. Wash and wipe the tomatoes
  2. Roast tomatoes and onion in hot ash for 10 mins
  3. Peel tomatoes and chop onions and tomatoes finely.
  4. Heat ghee/ oil add cumin, chopped onion, chopped garlic and green chillies.
  5. Add tomatoes and salt, cook for a few minutes.
  6. Serve hot garnished with coriander leaves.

Notes:

  • आप चाहे तो सिर्फ टमाटर का भर्ता भी बना सकते है।
  • लहसुन की quantity आप अपने स्वाद अनुसार कम या जयादा कर सकते है ।
  • इसे आप पिज़्ज़ा sauce की तरह भी use कर सकते है ।
