Tomato Onion Bhurta

INGREDIENTS:

Tomatoes 4 medium size
Green Chillies  3
Onions 2 medium size
Garlic 5 -7 kali
Cumin 1/4tsp
Ghee or Oil
Coriander Leaves
Salt to taste

INSTRUCTIONS:

  1. Wash and wipe the tomatoes
  2. Roast tomatoes and onion in hot ash for 10 mins
  3. Peel tomatoes and chop onions and tomatoes finely.
  4. Heat ghee/ oil add cumin, chopped onion, chopped garlic and green chillies.
  5. Add tomatoes and salt, cook for a few minutes.
  6. Serve hot garnished with coriander leaves.

Notes:

  • आप चाहे तो सिर्फ टमाटर का भर्ता भी बना सकते है।
  • लहसुन की quantity आप अपने स्वाद अनुसार कम या जयादा कर सकते है ।
  • इसे आप पिज़्ज़ा sauce की तरह भी use कर सकते है ।

Schezwan Potato

INGREDIENTS:

Baby potato 20
Schezwan sause (I used chings) 1 and 1/2 tsp
Cumin powder  1/4 tsp
Salt as needed
Curry leaves few
Coriander leaves few
Oil 1 tblsp
Mustard seeds 1/4 tsp
Sesasme seeds 1/4 tsp

INSTRUCTIONS:

  1. Boil the potatoes and peel the skin . Do not over cook the potatoes.172
  2. Transfer it to a wide bowl.
  3. Add the schezwan sauce, jeera powder, curry leaves, salt.
  4. Mix well and marinate this for 20 minutes.
  5. In a pan, preferably non stick add oil and throw in the mustard seeds and sesame seeds.
  6. Add in the marinated potatoes and fry for 10 to 15 minutes in a medium low flame.
  7. Switch off the flame when it becomes golden fried.
  8. Serve hot with any rice of your choice.
