WATERMELON BLUEBERRY COTTAGE CHEESE SALAD WITH CUCUMBERS

I wanted to create a refreshing salad that would cool you off without the need for ice cubes.  It’s starting to get hot and steamy here which makes me crave all the watermelon and cold cucumbers I can find.

It’s been so hot here the only thing I’ve wanted to eat is my Watermelon salad.
Did you know that Watermelon is 92% water and eating it keeps the body hydrated? This Watermelon and Cucumber salad with basil Lemon dressing are perfect in this hot weather as light lunch/ dinner. It’s simple, refreshing and big in flavour

My husband and I love salads. And I always try to make a new combination of salads every time. So here I present a cool combination of salad to beat the heat.

Refreshing and easy, Watermelon Blueberry Cottage cheese  Salad with Cucumbers is the side dish you’ll want at every meal.

INGREDIENTS:
2 cups large diced watermelon
1/4 cups blueberries ( Here I used dried blueberries )
1 English cucumber cut into chunks
1/2 cup Cottage Cheese ( paneer) diced
1/4 cup thinly sliced fresh basil
1 tablespoon Lemon juice
1 tablespoon honey
1/4 cup olive oil
kosher salt
fresh ground pepper

INSTRUCTIONS:

  1. In a large bowl, add the watermelon, blueberries, cucumber, Cottage Cheese and basil. Toss to combine.picsart_06-09-058282747625511571277.jpg
  2. In a small bowl, whisk together the Lemon juice, honey and olive oil. Season with salt and pepper to taste.
  3. Pour the dressing over the salad and toss to coat.
    Serve immediately.

    NOTES:

  • Salad can be made up to 8 hours in advance. Store in the refrigerator in an airtight container until ready to serve.
  • You can use fresh blueberries, cranberries and cherries too.

WATERMELON CANAPES

Looking for a fresh start for parties. Juicy Watermelon slices with black salt, cumin and pepper with the chillness of yoghurt are perfect to kick start any event.
This combo worked so well that the dish became an absolute favourite for both kids and adults.

INGREDIENTS:
Watermelon slices 10
Black salt 2 pinch
Thick Curd/yoghurt 1/8 cup
Pepper ground 1 pinch
Cumin ground 1 pinch
Cilantro/mint for garnish
INSTRUCTIONS:
  1. Take yoghurt/curd in a bowl and add freshly ground pepper and cumin…
  2. Take little black salt in a small bowl…
  3. Sprinkle/rub little black salt on watermelon slices(cut in your desired shapes, I cut it as Heart shape using a cookie cutter)…
  4. Place a spoon of yoghurt in top carefully in the centre…Garnish with little cilantro or mint to add to the freshness…

CURD RICE/ DAHI CHAWAL/OLIYA

Curd rice is the only food which can release a chemical called “Tryptophan ”
in the brain. This chemical calms down the brain and enables one to think coolly.
It is thus a perfect mood stabilising dish and it is quite popular in South India.I love curd- rice. It’s such a simple and light dish.
In my childhood, my dad used to make cool curd rice on the occasion of the  Shitla Saptami. Earlier there used to be simple tadka but since I love the spicy taste I made it with a chatpata tadka and my all time favourite pickle.
Add this tasty twist to regular curd rice and see the colour and taste unleash itself.
Make this recipe to add a tasty twist to your regular curd rice.If you are eating curd during the day, have it without sugar but if you are eating curd at night, add sugar or some black pepper. It will assist in digestion and calm your digestive system. This is very good for the stomach and a light option for the summers too.
So let’s get started with this simple dish with added flavours.

Cook Time: 10 mins
Servings: 2 PeopleINGREDIENTS:Oil 2 tablespoon
Mustard Seeds / Rai ½ + ¼ tsp
Cumin Seeds / Jeera ½ Tsp
Dry Red Chillies 4 to 5 nos
kaju 1tbspCooked Rice 1 ½ cup
Curd / Dahi 1 cup
Pomegranate Seeds ¼ cup
Sugar ½ tsp
Salt ¼ tsp
Chopped Green Chillies 1 med size
Coriander Leaves
Katki achar

INSTRUCTIONS:

  1. In a mixing bowl, add 1 ½ cup of Cooked Rice to that add 1 cup of Curd (Dahi).
    To the Rice mixture now add ½ tsp of Sugar, ¼ tsp of Salt, Chopped Green Chillies, ¼ cup of Pomegranate Seeds and mix well.
  2.  For tempering, in a preheated pan, take 2 tsp of Oil to that add ¼ + ½ tsp of Mustard Seeds (Rai), ½ tsp of Cumin Seeds (Jeera), few Dry Red Chillies, 1 tbsp of kaiju and few Curry Leaves.picsart_03-26-022495801377685303879.jpg
  3.  Sauté for 1 min and then add the tempering to Curd Rice mixture and mix well.
  4. Add freshly cut Coriander leaves as per your taste and serve.
    Serve with raw mango katki ka Achar .Fresh Mango Pickle (Katki Ka Achhar)

ORANGE AND STRAWBERRY PUNCH

Fresh Strawberries are now almost gone from the market before they are gone Try this refreshing and healthy fruit punch which is as tasty as beautiful.
I am a big juice lover. I try new combinations in my juices every single time. This time its  2  of my favourites,  orange & strawberry. It really tastes awesome you will surely love it.

INGREDIENTS:
5-6 strawberries chopped
8-10 mint leaves
1 tsp sugar (optional)
A small piece of ginger
1 cup fresh orange juice
3-4 ice cubes ( optional)
black salt a pinch
1tsp chia seeds.

INSTRUCTIONS:

  1. Take bender. Add strawberries, oranges juice, ginger black salt and blend till everything mixes thoroughly.picsart_03-08-023224537831751090913.jpg
  2.  Strain (if needed) crushed ice cubes. Blend for few more minutes
    Serve into a decorated glass with mint leaves & chia seeds  & enjoy the chilled & refreshing drink!

NO COOK MANGO MALAI KULFI

This is an easy, Instant Indian style no cook mango kulfi recipe using ripe mango, milk, milkmaid (condensed milk) and cream.

When my fellow blogger friends posted this no-cook mango kulfi recipe, I got tempted to try it at home.
I surfed the net and found perfect to try the recipe at Chitrasfoodbook .

I didn’t have amul cream so I used homemade malai and the result was superb . Melting in the mouth kulfi,with no added sugar- only natural mango sweetness. My hubby gives 10 on 10 for this.

Friends, try this easy mango kulfi for your kids. As this is a no-cook recipe, kids would be interested to prepare it by themselves.A nice way to busy your kids to make such a delicious no-cook recipe.

They will love its creamy texture and lovely color for sure. Let this be a healthy summer treat with mangoes for them.

Prep time: 5 Minutes
Cook time: 6 Minutes
Serves:4

INGREDIENTS :

Ripe mango – 1 no ( 3/4 cup chopped)
Sweetened condensed milk – 1/4 cup +1 tbsp (I used Milkmaid)
Fresh cream – 1/4 cup ( I used homemade  malai here )
Boiled milk – 1/3 cup ( at room temperature)
Cardamom powder – 1/4 tsp
Saffron threads – Few

INSTRUCTIONS :

  1. Wash and peel the skin of the ripe mango. Chop into cubes.1527738981067
  2. Take chopped mango, condensed milk, milk, thick fresh malai, cardamom, and saffron.1527739082432
  3. Grind to a smooth paste without adding more milk or water. Grind in a low speed till everything becomes a paste. Kulfi mixture is ready
  4. Fill in kulfi mold and cover with butter paper.
  5. *Make sure the butter paper touches the kulfi mixture. This helps to avoid ice crystals formation. Insert a popsicle stick and freeze for 6 to 8 hours. Overnight is the best.

NOTES :

  • You can use Amul mithai mate or homemade condensed milk in this recipe.
  • Do not use hot milk while grinding, mixture may curdle.
  • I have not added sugar as the mangoes were sweet and sweetness from condensed milk was just enough. If you want you can add sugar as per the taste of your mangoes.
  • Add fresh cream finally then just use whip option for mixing. Do not blend more as it may churn into butter especially if you are using homemade fresh cream.
  • The butter paper trick was really amazing.

WATERMELON SORBET / 2 INGREDIENT RECIPE

Watermelon Sorbet is a good option when you want to cook something different. The flavourful ingredients are the key to the amazing taste of Watermelon Sorbet.
Bored with watermelon and its juice, I decided to try something innovative and new. When I saw this recipe on the Nestle milkmaid site, I geared up to try it and it turned out to be -‘Simply Great!’
The best thing about this sorbet is it requires only 2 ingredients – fresh watermelon and sweetened condensed milk. So easy!
This incredibly refreshing healthy and quick dessert is perfect for beating the heat and so easy to make, no ice-cream maker needed for this! The delicious and mouthwatering Watermelon Sorbet is enjoyed by all.

INGREDIENTS
1/2 kg-Watermelon Pulp
1/2 tin (200g)-NESTLÉ MILKMAID Sweetened Condensed Milk
INSTRUCTIONS
  1. Remove all seeds from the watermelon and cut into small pieces, place the watermelon in a blender.
  2. Mix in NESTLÉ MILKMAID Sweetened Condensed Milk and blend till smooth.1527403074133

  4. Arrange the frozen sorbet cubes in a dish and serve immediately.
